Easy Energy Bar

Energy bars are expensive and many of us get that energy slump around 3pm. Sometimes I go to the vending machine and get something that is not so good for me (soda, chips, chex mix…my fav). I got the basic idea of it from an oatmeal cookie recipe but put a twist on it. So, this is a super easy no-bake energy bar.

Items:

  • oats (rolled or quick cook)
  • banana (ripe or slightly over ripe)
  • cocoa powder
  • flax seeds (or sunflower seeds, pumpkin seeds, or nuts)
  • boiling water
  • brown sugar (or raw sugar)
  • plastic wrap

Mix together 2  & 1/4 cups oats (I have used old fashioned oats and quick cook…it just changes the grainyness of the bar), 1/2 cup cocoa powder, 1/4 cup seeds (flax, sunflower or nuts work), 1/2 chopped banana, 3/4 cup brown sugar. I like flax seeds personally but for those of you that like sunflower seeds, pumpkin seeds or nuts it works with those too. Flax seeds, sunflower seeds and nuts are high in Omega 3s. Omega 3s are said to give you energy.  I use brown sugar. The show I watched they used honey so I know that works. But, how do I put this nicely, I do not digest honey well :) So I use brown sugar.

After you integrated everything add  1 cup boiling water. Mix together well. I use a wooden spoon to mix.  Rip a sheet of plastic wrap. I use about 6 or 7 inches. Take a heaping spoonful of the mixture about 1/4 of a cup and place on the plastic wrap square. Then cover it like a little package. Continue to do that until all of the mixture is gone. It makes about 8 bars. Then place the plastic wrapped bars in the refrigerator and let sit overnight. In the morning you have a nice, filling power bar for a snack or even for breakfast.

My husband and I LOVE this bar!  It fills you up and gives you that afternoon pick-me-up.
